When biting into a churro, first comes the crunch, followed by a soft and airy sensation, like the comfort a fluffy pillow offers to a tired head. Then, the flavors begin to orchestrate their magic. Sometimes, they emanate from the exterior; other times, they burst from the filling inside, or on occasion both, creating a delectable harmony worthy of Beethoven.
From there, texture gives way to shape. Whether slightly curved or straight, a churro’s elongated, cylindrical, ridged surface of uniform thickness offers almost infinite flexibility for bending, chopping, looping, or enrobing. The churro literally adapts at will. It’s so scrumptious and adaptable, as though it were created to be perfect in a modern laboratory. But what makes the churro so incredible is that it wasn’t. The churro has been around for ages, a testament to its timeless appeal and enduring perfection.
Early Origins
Some argue the story of the churro began in ancient China, around the Tang Dynasty (618-907 AD), with a simple fried dough pastry known as “youtiao.” Portuguese sailors, who had extensive trade routes in the East during the early days of global exploration in the 16th century, encountered youtiao and brought the concept back to Europe. However, youtiao is typically savory and often served with rice porridge, quite different from the sweet churro we know today.
Or, quite possibly the churro might have started with the Arab world and the influence of the Moors in Spain. The Moors ruled parts of Spain from the 8th to the 15th centuries, bringing with them their rich culinary traditions. Among these was a type of fried dough pastry known as “zalabia” or “zalabiya,” which is a deep-fried dough often soaked in honey or syrup. This treat is still enjoyed in many Middle Eastern and North African countries today.
Spanish Homeland
The churro as we know it today likely evolved during the time of the Spanish shepherds. Shepherds needed simple, portable, and satisfying food that could be prepared over an open fire in the mountains. The churro fit this need perfectly. Made from basic ingredients of flour, water, and salt, the dough could be easily mixed and fried, resulting in a delicious and energy-rich snack.
The churro’s distinctive shape, often resembling the horns of the Churra sheep—a breed native to the Iberian Peninsula—further embedded it into the pastoral lifestyle. This shape was achieved by piping the dough through a star-shaped nozzle, creating ridges that helped the churro cook evenly and provided a pleasing texture.
Evolving Treat
Over time, the simple fried dough of the churro began to be rolled in sugar, transforming it from a plain snack into a sweet treat. This adaptation made churros even more popular across Spain, as they became a favorite at fairs, festivals, and street markets. The tradition of dipping churros in thick hot chocolate, especially popular in Madrid, further solidified their status as a cherished Spanish delicacy.
By the 17th century, churros had become an integral part of Spanish cuisine. They were enjoyed by people from all walks of life and became a staple at churrerías, specialized shops dedicated to making churros. These shops spread throughout Spain, each offering their own variations, sometimes filling churros with sweet fillings like chocolate or caramel.
Churros in The New World
The Spanish colonization of Latin America in the late 16th and early 17th centuries played a crucial role in spreading churros to the New World. Churros quickly became integrated into the culinary traditions of various Latin American countries, each adding its own twist. In Mexico, for example, churros are often filled with chocolate or caramel and served with hot chocolate for dipping.
Modern Day
Today, churros are a global phenomenon. They can be found in cafes, bakeries, and restaurants around the world, from the bustling streets of Madrid to the theme parks of the United States. Modern chefs continue to experiment with churros, creating innovative flavors and presentations that honor the traditional while pushing the boundaries of this classic treat.
