The earliest known frozen chocolate recipe dates back to 1693, published by Antoni Latini in his work The Modern Steward. Given that cocoa was readily available in forms like coffee and tea, it made sense for people to experiment with freezing these popular beverages to create early frozen chocolate desserts.There’s some debate, however, as to whether early mentions truly refer to ice cream or a form of chocolate sorbet. Italian doctor Filippo Baldini, in his 1775 work De Sorbetti, recommended what he described as chocolate ice cream for various medical conditions. Regardless, it’s clear that the idea of freezing chocolate for consumption predates many traditional vanilla ice cream recipes, which seemingly didn’t appear until the 1760s, a time when vanilla was far more rare and exclusive.
